Slow Meat Symposium in Denver

“In the western world, especially in the United States, there’s been an industrialization of the whole process.”

Nicolette Hahn Niman, author of a new book Defending Beef: The Case for Sustainable Meat Production says that by the beginning of the 21st Century we had completely industrialized the way we produce animal based food resulting in massive food lots with cows, pigs and chicken being kept in confined spaces for their entire lives. This has had enormous consequences for the welfare of the animals but also for food safety issues and environmental issues. Hahn Niman first started working on this issue as an environmental lawyer working for Robert F. Kennedy Jr.
