Outsources producer Sean Kenney speaks with essayist John Birdsall. Earlier in his career, John worked as a restaurant cook and later a restaurant critic. In embracing a more narrative non-fiction form in his writing about food, John has shared his insights on queer perspectives in the kitchen and at the dinner table. In this interview, John discusses how the roots of American cuisine trace back to gay perspectives, and also how heterosexism shows up in the restaurant industry.
